Sundried Tomato and Lemon Orzo



I could eat this pasta dish every day.  The orzo is light with a delicious lemon infused sauce.  The sundried tomatoes and toasted sliver almonds add texture and in my opinion, this is the perfect side dish for my Petrale Sole Dore with Lemon Caper Sauce

INGREDIENTS

16 oz Box Orzo
1/4 Cup Sundried Tomatoes
1/4 Cup Toasted Almond Slivers
1/4 Cup Chopped Parsley
1/4 Cup Butter
2 Tbsp a Good Olive Oil
Juice of 1 Lemon
1 Tsp Finely Chopped Lemon Zest
1/4 Cup Grated Parmesan Cheese

DIRECTIONS

Cook Orzo in a large pot of salted boiling water for 10 minutes, until al dente.  While the pasta is cooking toast the almonds in a pan or in the oven until golden.  Rinse the sundried tomatoes from the olive oil mixture it comes in.  Chop and set aside.

Once pasta is done, drain and set aside.  In the same pot over medium low heat add the butter, olive oil, sundried tomatoes, lemon zest and lemon juice.  Once the butter has melted add the pasta back, mix and then add the parsley and parmesan cheese.  Mix one more time and then its ready to serve.

Simple, yet so tasty.  Everyone in your family will love it!
